I'm sure everybody has seen this, but thought I'd squeeze in a little cute for the day. Hopefully the audio isn't annoying. Our speakers went kaput, so I can't tell:

 
 
Well I guess Im on a roll... been digging through my head for ideas for work, and I'm tossing this one around this weekend. Its a tropical feel once again. Trying to shake this cold crappy weather.

Shrimp and Coconut Encrusted Mahi W/ Red Curry sauce


1/2 pound 16/20's
2 cloved garlic Pressed
1 inch chunk peeled fresh ginger pulverized
1 tsp toasted sesame oil
4 scallions sliced thinly
1/2cup 36% cream (or heavier)
salt
white pepper (go heavy)
egg yolk


put all the ingredients in the processor except the cream and scallion
whiz the crap out of it...
when its just slightly chunky start adding the cream and whiz till it mounts like a mousse.
fold in scallions (if you want chunk up a few shrimp and fold them in too)
TASTE THIS!! it should be a little salty and very... asian-y...:P


get yourself a couple coconuts, pop em open once they are ice cold. Enjoy Coco Frijo! (its good to drink for breakfast TONS of BVitamin and Potassium)
then toss those bad boys in a 400 degree oven for an hour... shut off the oven and forget abut them til they are cool enough to handle. At this point the shells wil have let go of the flesh.
Grate the coconut place it in the fridge (dont add any sugar).



ok here is the fun part.

take a 6oz Mahi Filet
Spread a half inch thick on one side with the shrimp Mousse
press the mousse side into the shredded coconut, really hammer it on there... the mousse will stick to the Mahi better if you dry it first.

ok... in a sautee pan, 1tbl Butter, 1 tbl canola, place NO MORE THAN 2!! fillets coconut side down in the pan Medium heat and let em go just until brown... Light brown... you will smell the coconut toasting... you know the smell... once they are there... flip em... toss em in a Hellishly hot oven for 6 or 7 minutes.

Fr the sauce... 2 teaspoons red curry paste, half a can of coconut milk(unsweetened), a touch of honey, and some fine diced red pepper.

I'm having trouble finding a really knock-your-socks-off spicy gingersnap recipe. I've explored a pepper cookie (Pepperkakor) recipe that was ok, added cayenne to my tried and true Betty Crocker spice cookie recipe... but I need more. My dad and brother are both the "already have everything" types so I want to give them a baked treat for Christmas... They both love foods like kimchee, Thai curry, hot sauce... (and my regular spice cookies!) in fact they have both competed in a local salsa making contest and dad has gotten honorable mention a few times.... So I want to appeal to those tastes but with a spice cookie.

Any ideas? If you have a recipe to point me towards thats awesome but I do have some time to experiment if you have spice combination suggestions.

Michelle Duggar gave birth to baby #19 last night after the reality star was rushed to the operating room for an emergency c-section.

TMZ spoke with a rep from TLC who told us, "Michelle, who has been in the hospital recovering from a gallstone, was taken to the OR for an emergency c-section.

At 6:27 PM, Michelle and Jim Bob welcomed their new daughter, Josie Brooklyn ... who weighed in at 1lb., 6 oz.

We're told Michelle is resting comfortably and the baby is "stable" -- although she's in the neonatal intensive-care unit at the University of Arkansas for Medical Sciences.

The rep added, "The most important thing right now is for Mom and baby Josie to get as much rest as possible. The family is grateful for all the prayers and well wishes during their recovery."

Hello!


I (somehow) got roped into bringing cupcakes to a child's birthday party. The only problem is, the parents idealy want the kids to be able to decorate the cupcakes themselves, and there with be severely limited cooking facilities available at the location (probably just a kettle)

Does anyone have a good recipe for frosting that will stay soft long enough that I can transport it to the part (About two hours, I would estimate) and that won't be horrifically messy?

I have air-tight containers, if that's helpful.

I have a really special request, and I know it's so boring of me.

For the past 4 yrs, my husband has been on and off again in Afghanistan.

HE'S FINALLY COMING HOME FOR GOOD!

I wanted to make him a nice (but small) buffet of sweets and I wanted some of your BEST recipes.
(I want to make everything mini and bite-sized)

His favorite types of sweets include cheesecake, chocolate/orange combination, shortbread/ginger/pumpkin, and apple!

Tom Scavo is finally getting professional help for that nasty mid-life crisis of his.

Desperate Housewives has inked a deal with Frasier’s Jane Leeves to play Tom’s psychotherapist in at least two episodes, sources confirm to me exclusively.

Leeves, whose arc kicks off in late January, isn’t the first Frasier grad to pass through Wisteria Lane. Harriet Samson Harris, who played Frasier’s brash agent Bebe, recurred in Seasons 1 and 2 as Felicia Tilman. And former Frasier showrunner Joe Keenan serves as a consulting producer on DH.

Tom won’t be the only Wisterian getting psychiatric attention in early ‘10. Word has it Katherine will also have her brain examined by a shrink in the new year. Better late than never!

Jambon, fromage, tomate on a sunny day in the square behind Notre Dame de Paris. It's amazing that many tourists don't know the place, perhaps that's why locals drop by for a quick lunch or snack on one of the many benches.

The best part is that if you sit on one of the benches with your back to NDdP and throw your head back, the view you get is this.

Thirty Seconds to Mars performed tonight on Conan and well, if you haven't heard, the band has basically a shitload of people gracing the cover of their latest album, "This is War", including this little gem right here:

Look what Kendra Wilkinson found under the tree this year!

The E! star and her NFL-player hubby Hank Baskett welcomed their first child together, son Hank Baskett IV, at 12:37 a.m. Friday in Indianapolis.

The wee one was delivered via C-section, weighing a robust 9 pounds, 5 ounces. (He is a football player's son, after all.)

E! reported this NINE MINUTES after she gave birth. )

Michael Jackson, the King of Pop, will be the King of the 52nd Annual Grammy Awards, which is to be held on January 31, 2010. Michael Jackson will be awarded a Grammy Award for 'Lifetime Achievement'.

Jackson, along with Bobby Darin, Leonard Cohen, Loretta Lynn, and Andre Previn will be honored at a special ceremony, and will be presented with the awards, the day before the Grammy Awards on January 30, 2010.


E Online reports: "It will be the 14th Grammy of his storied career. (And it might not stop there: The soundtrack to This Is It will be eligible for the 2011 awards.)"

Do you think MJ is destined to receive 15 awards if he is nominated in 2011?

LL Cool J mentioned that he thought a Billie Jean performance should be what is done for MJ's planned Grammy tribute. He said that's what he thinks 'would be hot.' Neil Portnow, the Recording Academy President/CEO said: "Michael Jackson is important to us. Michael is iconic."

Times pop music critic Ann Powers sat down with Lady Gaga (real name: Stefani Germanotta) in Boston after the first U.S. date of her Monster Ball tour, a trek that hits Los Angeles with three shows at the Nokia Theatre on Dec. 21-23. Powers writes that Lady Gaga has "tapped into one of the primary obsessions of our age -- the changing nature of the self in relation to technology, the ever-expanding media sphere, and that sense of always being in character and publicly visible that Gaga calls 'the fame' -- and made it her own obsession, the subject of her songs and the basis of her persona."

I'm glad she calls herself a feminist and said something to oppose people wanting to label her the next/new Madonna. I guess this is news for those who remember this post where she infamously said, "I'm not a feminist. I hail men, I love men."
