Portuguese Egg Tart

This is my first attempt at making Portuguese Egg Tart.  This recipe was posted by [info]loopedbusrides yesterday.  She was kind enough to share the recipe with the [info]bakebakebake community.  After viewing the pictures, i just had to try it.  It looked simple enough.

[info]loopedbusrides used store bought puff pastry, but i am a sucker for punishment.  I actually made my puff pastry.  Overall I am happy with the end result.  I whipped the custard mixture for a good 15 -20 minutes, which made the custard very light.  Just the way i like it.  If you like your custard dense, please don't whip it that long.

Really enjoyed making this and will do it again.  This recipe makes 24 small egg tarts.  I changed it slightly from the original recipe.

Ingredients:
500g of ready-made puff pastry
200ml whipping cream
300ml full cream milk
80g sugar
4 eggs
3 egg yolks
1 vanilla pod

Method:
1. Divide pastry into 20g portions, roll out to about 3mm thickness. if pastry starts to get sticky, put some flour on your rolling pin/board. press onto tart moulds.
2. Combine whipping cream, milk and sugar and cook just until sugar dissolves.
3. Add into beaten eggs and yolks.
4. Mix well and bring it to a minimal boil.
5. Add the vanilla pod (split), and then set aside to cool.
6. Pour filling into pastry tart (2/3 mark), bake at 220ÂșC for about 30 mins.
7.  If you have a blow torch, just brown the top a little more.

Update:  Emailed dad, and showed him the tarts, and he loves it! He wants me to make it when he comes back!! hehehehe

wow wow wow!!! looks so pro!!!
Question: where can i get the pastries and vanilla pods? Can vanilla essence do the job? Use Muffin tray can? :p

.pastry-idiot.
vanessafrida[info]vanessafrida on 12th October 2006 03:16 (UTC)
Hello again :)

They are so not pro...trust me. You can get the pastries from the frozen section in the supermarket. It should be close to the frozen pies etc. :) Yes you can use vanilla essence, but of course they taste better with the pod. But i do realise that is costly. I just had a couple lying around at home. Muffin tray...sure!

That looks incredible!! I think egg tarts are one of the most difficult things to make because they are so delicate. But yours look wow!
Do you own a blow torch? I would love to buy one for Merv but have no idea how much it costs.
vanessafrida[info]vanessafrida on 12th October 2006 08:18 (UTC)
They are really simple. HONEST!!! PROMISE. Yes I do own a blow torch, Cheok bought one for me two years ago...finally used it. Next attempt will be creme brulee. :) Erm...I remember cheok saying it is quite cheap...about $80

Hi Vanessa! Thanks for dropping by my fotopages the other day. That portuguese tart I made was actually my first try. I still need to work on the crust though. I will try out your version soon because I can see just how nicely puffed and browned yours are. Btw, how did you get the filling to look like that? I've read some other posts saying that after baking it for 10 minutes, they pour a little bit of sugar syrup on top of the tarts. Is that what you did?

Anyways, great looking portuegese egg tarts you have there.Well done! ;)

vanessafrida[info]vanessafrida on 17th October 2006 04:47 (UTC)
hi Zakiah, your portuguese egg tart looked great. hmmm....i did it the healthier way, i didnt add the sugar after ten minutes (which would work, and it would be tasty) but i just used my blowtorch to brown it. So no sugar needed to be sprinkled. of course sprinkling the sugar would have made it better :)

im comenting on an ancient post...-_-''' haha but i attempted to make the egg tarts today!!! it was really exciting except that i stirred the custard for an hour coz i was so scared that it wud curdle...but it turned out fine! i got kinda worried in the end and i tweaked the temperature a bit and then it had lil specks so i panicked and immediately dumped it into a cold water bath! and stirred like mad!!! haha but it was an alright consistency in the end! =) thanks for sharing the recipe! being stuck here in nz is sad...especially in dunedin where egg tarts are only available at a high price on weekends during dimsum times -_-''' i would put the pictures up but i dono how... =( i sound real sad...haha but it got kinda poofy tho...likeit puffed up! i wonder why...=) im cooking your lor bak tomoro! hee hee!

Hey! Thanks for taking the time to actually comment and such a detailed one as well!!

I am glad it went well for you...probably went poofy cos you stired it a fair bit so it got airy...which is great!

Well done!!
