Dinner @ Home with Esther  
Dinner with Esther last night became not just a catchup night, but also a night of celebration.  Esther got promoted!!  She found out yesterday!!  Boy am I glad I asked her over for a steak dinner.

Man did I give her a steak.  A huge FAT one.  One which you wouldnt get at most restaurants.  A special steak for a special friend on a special day!  


Check out the piece of steak!

well dinner ended being really late due to work and celebrations, but Esther was happy she was finally getting a chance to try my cooking.  

On the menu was a Ribeye steak with sauteed mushrooms, served with wasabi mash potatoes and garlic brocolli.

The mushroom i have never tried making before it was a first.  But it turned out impressively well.  Something I will want to repeat again, but not for Cheok, seeing he is not  a fan of mushrooms.

It was a toss up between normal mash or wasabi.  But I decided on wasabi because that omits the mustard for the steak.  

After the wonderful meal, Esther and I just chilled at my place and chatted the night away.  There was so much to catch up on.  We havent seen each other in the longest time, and we had to much to tell.  I am thankful and happy my friend is doing great, and everything is falling into place with her.  

I forgot to take a picture of her tucking in....that would have been a nice touch.  I love watching friends enjoying a meal i have cooked.  :)



Now for the recipe.

Red Wine Steak

Ingredients

2 pieces of steak  ( each steak was abt 400g)
1 teaspoon cracked pepper
1 teaspoon salt
1 cup red wine
1 teaspoon rosemary, minced
1 tablespoon butter

Method:

1.  Marinate the meat with the pepper, salt, red wine and rosemary for at least 4 hours.
2.  Coat the butter on the hot skillet.  (High heat)
3.  Place the steaks on the skillet while it is on high heat.
4.  Sear both sides for 1 minute.
5.  Reduce the heat, cooking each side for 5 minutes for a medium steak.
6.  Turn off the heat and allow the steak to 'rest'.



Sauteed Mushroom

Ingredients:
1 tablespoon butter
1 teaspoon cracked pepper
3 teaspoon brandy
6 mushrooms (i used the white ones.  I think they are called campbell's mushroom.  FRESH)

Method:

1.  Melt the butter in a saucepan till it is hot
2.  Add the cracked pepper
3.  Add the sliced mushroom.
4.  Stir on low heat for 5 minutes.
5.  Add the brandy, and allow this to reduce
6.  Serve on top of the steak

of course! Nothing but the best for my family and friends.

I had 3.4kg of ribeye meat sitting in the fridge. I like to buy a huge over 3kg piece, and cut it the way i want it. And leaving some for a roast of course :)

That looks utterly delicious, and I have been hanging out for a good steak for a while now! The only thing is, I'm allergic to alcohol (yeah I know >_< ) and I was wondering how did the one cup of red wine affect it? Was it still really strong after cooking?

I love how simple and how delicious looking your recipes are! I wish I can spend as much time in the kitchen as you do!!

Thank you. Erm you don't have to use red wine if you don't want too. Can you add a tablespoon of oyster sauce to the marinade instead? It will help :)

Most of the alcohol is gone...cos of the heat...but some of it might still be in the middle if you like your meat cooked to medium. :) But I couldnt taste the alcohol.

Yea the recipes are simple cos I am a newbie :).

I am cooking heaps at the moment cos i am on leave, and i can. Once I start work, it will die down again. :)

Hi Vanessa, I first noticed you on one of sg cooking communities and have had you on my friends list for a while. I thought I'd comment now, since I cooked my first piece of steak tonight. I have to admit, though, that my fiance and I didn't really follow your recipe exactly, but it was your recipe that inspired me to try cooking a steak.

It was quite a disaster, I think. And most probably because we don't have a skillet at home. We tried to cook steak in a metal wok, which failed miserably. The meat looked wonderfully cooked on the outside but we found it bloody in parts upon slicing it open. Sigh.. We tried to put the meat back on the fire and managed to salvage about three-quarters of it before we gave up from fear of E.Coli poisoning. It especially didn't help that I'd just watched the trailer of Fast Food Nation. =/

We also tried your mushroom recipe, but substituted brandy for wine. That turned out to be nice, but we didn't leave the mushrooms to cook for long enough, so they were still a little firm. But that was probably the best part of the meal. Heh.

I will probably post a picture of my steak attempt on my blog. Do check it out if you want to. :)

Hi there, thanks for leaving a comment. Here's a tip on cooking steaks...probably will help the next time you try this again.

Have you got a frying pan? That would work better than a wok. Have the pan very hot, place the steak on...each side for 1 minutes, after that turn the heat down to a small flame. This ensures that inside is cooked well without charring the outside.

The high heat at the start is to ensure that the meat is "sealed".

I had a disaster cooking session a few weeks back and I'm happy to be back on track with your recipes. :)

I love that your recipes are so fuss free. although I have to say your recent ones look rather challenging. I think I'll stick to the simple ones for the moment.

Yea i have grown a bit in the cooking department...do have a look at the truffle pasta with mushrooms i just posted. (still on the first page of my blog) that one is still fuss free and good :)

I wanted to try that but I couldn't find truffle pasta in time. and I didn't wanna substitute it with the normal one cos the bf loves truffles. heh

I posted a pic on mine too. although my mushrooms kinda overwhelmed the steaks as compared to yours :)
