Yong Tau Foo Soup  

The fried bean curd yong tau foo is featured here

I am a huge fan of Yong Tau Foo Soup. Actually I think most gals are. It's healthy, soupy, what's there not to like!  My interpretation of Yong Tau Foo is simply various tofu or vegetables filled with a yummy fish paste.  Of course fish balls are also good.

My personal favourite of yong tau foo pieces has got to be a toss up of either the green chilli or dried bean curd stuffed with fish piece.  The bean curd absorbs the gorgeous soup... out of this world...yummy!

I like enjoying yong tau foo at home because I love the soup.  It is so simple and the best thing....NO MSG!!  I can have a guilt free slurp.  

This soup is very versatile.  I usually make a huge stock pot of it and pack them in individual ziplock bags and chuck them in the freezer.  They go well with some fish slices, tofu and vegetables or with some mince pork and vegetables.  Anything goes!


Bittergoud and okra is featured here

Ingredients:
3 yellow onions, sliced (you can use any sort of onion, amount is also up to you)
1 head of garlic, skin on and bruised
1 tablespoon white pepper corns
2 cups dried anchovies (ikan bilis)
2 cups dried soya beans
2 inch ginger, skinned and sliced
14 cups hot water
Yong tau Foo pieces

Method:
1)  Saute the yellow onions, dried anchovies and soya beans in 2 tablespoon of oil till the onions go transparent.
2)  Add the garlic, pepper corns and ginger and continue to stir till fragrant.
3)  Add the water, and allow this to simmer for about 3 hours.  
4)  Drain the stock, throw the anchovies etc away.  You just want the stock
5)  Bring the stock to a boil and add your yong tau foo.  Boil for 4 minutes.
6)  Serve immediately.

Note:  If you want to make your own yong tau foo pieces.  It is possible.  Just buy some firm white fish fillets with the skin off. Batang is a good choice.  Put it in the food processor to blend till a paste, add some salt, pepper and corn flour to help it along.  Cut up some vegetables (capsicum, okra, green seeded chilli, red seeded chilli) and add the fish paste on them.  You can also buy some firm fried bean curd, slit a hole and stuff the fish paste in.  That is it!  


Onions in the stock pot


Garlic and ginger added


Soya beans added


dried anchovies added


Hot water added


Ready to be served

My sister tried with what is called Spanish Mackerel here but the meat won't turn into paste. For me, I thought that only certain type of fish will work! =)

oh i shall try your version next time which I'm sure is much tastier. My stock is very simple: Boil with pork bone, ikan bilis and soya bean!

Thanks for this. I really do love reading your recipes and seeing pictures. :D I haven't tried any out yet, but I plan to. I just keep bookmarking.

I will probably try this. But maybe without the bittergourd. So gross. D: Haha. As a little kid I hated it, as a young person, still. But my relatives came over and brought two whole bags full of it for my parents. D: Ohnoes.

How shall I heat the soup up after I've put them in the freezer?

Defrost the soup stock, once it is in a liquid form, pop it into a pot...add whatever ingredients you feel like having, bring it to a boil...add some nice green vegetables, serve it with some rice and you have a meal...quick meal :)

I remembered your recipe and decided to make yong tau foo soup for dinner tonight. I didn't follow everything, though - no soy beans, peppercorns and ginger.

Stir fried onions, garlic and ikan bilis. Then added water and spinach. Soup is boiling now. Will add in the yong tau foo later and serve with bee hoon. The soup smells great now. I'm totally looking forward to dinner later :)

Yes, you're right. It turned out quite vegetable-y in the end, but still very tasty though, from the ikan bilis.

I didn't want to do the soya beans because I wasn't going to have the time to boil for 4 hours, and I was worried the beans wouldn't get soft enough, so decided to just do the ikan bilis in the end. Next time, when I have more time, I will definitely try it with the beans. :)
